VEGAN BANH MI

 

MAIN INGREDIENTS:⁣

Green Rebel Chickpea Sausages, sliced in half

1 Medium Baguette

1 Cup Mushroom (Sliced)⁣

4 Cloves Garlic (Chopped)⁣

Olive Oil⁣

4 Tbsp Vegan Mayonnaise ⁣

1/4 Cup Pickled Veggies⁣

Cilantro


PICKLED VEGGIES:⁣ 

1 Medium Size Daikon (Sliced Into Matchsticks)⁣

1 Medium Size Carrot (Sliced Into Matchsticks)⁣

2 Medium Size Cucumber (Seeded And Sliced Into Matchsticks)⁣

5 Big Green Chile (Thinly Sliced) ⁣

1 Cup White Vinegar ⁣

1 Tsp Salt ⁣

1 Tbsp Sugar ⁣

*MIX ALL IN A JAR AND STORE IN CHILLER FOR 1 HOUR

STEPS: ⁣

  1. Over medium heat, cook Green Rebel Sausages with some oil for 1-2 minutes each side until lightly browned. Set aside.
  2. In a separate pan, saute chopped garlic and mushrooms with some olive oil. Cook for 2-3 minutes. Set aside.
  3. Toast baguette and slice in half.
  4. To serve, assemble sauteed mushroom, sausage, vegan mayo, pickled veggies, and cilantro.
  5. Enjoy!
